Green Beans with Ginger, Scallions & Cilantro
serves 4
ingredients:
- 4-6 cups trimmed organic green beans 
- 3 tablespoons grassfed butter 
- 1 tablespoon grated peeled fresh ginger 
- 1 grated garlic clove 
- 1/2 cup water 
- 2 scallions (green onions), chopped 
- handful of fresh cilantro, chopped 
directions:
- melt the butter (3 tablespoons) in a small pot over medium heat. add the fresh ginger and garlic. cook for 1 minute and set aside. 
- put the green beans in a skillet with 1/2 cup water and 1 tablespoon of butter. boil over medium-high heat until the water evaporates, approximately 8 minutes. Sauté the beans in the skillet for about 2 minutes. 
- add the chopped scallions to the skillet as well as the ginger, garlic butter. add in a handful of chopped cilantro leaves and toss together. 
- add freshly ground pepper and sea salt!
